麻油和米酒是台灣料理常見的配料。麻油料理中使用的是黑芝麻榨油,濃郁香醇。米酒則是台灣本地出產的蓬萊米混合糖蜜酒製成,味道較其他地方出產的白酒較為甘醇,風味獨特。
